Celebrate World Food Day this weekend on October 16, 2022! Food is a great way to bring people together and share memories! This yummy recipe was the favorite of one of Chef Frank Pellegrino Jr.’s dear friends while he was going through chemotherapy. Frank’s friend said this dish helped him feel better during his treatment. This widely used combo of vegetables creates a hearty, healthy and tasty dish. Whether you want to bring comfort to a friend, sit around the table with family or just enjoy a tasty meal, this dish will make your taste buds smile!

¼ cup olive oil
1 potato, peeled and cut into eighths
1 onion, peeled and sliced ¼ inch
1 28-ounce can imported Italian plum tomatoes, hand crushed with the juice OR 1 32-ounce jar of Rao’s Homemade Garden Vegetable Marinara Sauce
¼ cup vegetable stock
1 zucchini, peeled and cut into 1-inch slices
1 green bell pepper, seeded and cut into 1-inch strips
1 small eggplant, peeled and cut into 1-inch cubes
1 garlic clove, peeled and minced
Salt and pepper to taste
1 pinch of oregano
2-3 fresh basil leaves

1. Heat the olive oil in a stockpot or skillet over medium heat.
2. Add the potato and onion. Sauté until the onion softens, about 5 minutes.
3. Add the tomatoes or Rao’s Homemade Vegetable Garden Marinara Sauce and vegetable stock. Stir until water and tomatoes form a blended consistency. Once blended, add remainder of ingredients, except the basil.
4. Bring the vegetables to a boil, cover the pot, and reduce the heat to a simmer. Cook for 30 to 40 minutes, until tender. Add the basil and stir. Place in a serving bowl, serve hot and ENJOY!

Frank's Tip: If you need to pack on some calories, prepare this sauce for your favorite pasta. OR add an additional cup of vegetable stock to create a very hearty and easy-to-swallow soup.
